These white grits are delicious and produced from Organically Grown Open Pollinated Corn. The term "speckled" just means that we've stone ground the whole nutrient dense grain including the bran and the heart or "germ". (Most store-bought grits are purposefully denatured by removing the bran and the germ so that they'll last on the shelf indefinitely.) This is why storing these grits in your refrigerator or freezer will prolong their freshness. White grits are traditionally served for breakfast, generously salted and often with a pat of butter and sometimes grated cheese. We gussied them up to serve at our daughter's wedding, replacing the cooking water with chicken stock and cream and then adding guyere, white cheddar, cream cheese and garlic.
